Lots of chunky turkey in a simple homemade tomato sauce.
Ingredients
1 package rigatoni pasta
1 package ground turkey
1 regular size can tomato paste
Onion
Garlic
Italian seasoning
crushed red pepper
fresh basil
x-virgin olive oil
brown sugar
salt
pepper
Do it up
Boil water for the pasta & preheat large pan on medium high. Start cooking the pasta when water is boiling. Oil up the pan. Break the turkey into chunks with your fingers and throw on the hot pan. Season with the Italian seasoning, red pepper, salt & pepper. Turn heat to high. Shuffle around the turkey periodically with a spatula.
When pasta is done, strain it. Heat should be at medium to med low. Oil the bottom of pasta pot and add oil & chopped onions. Cook a few minutes till sorta clear and add garlic. Cook for a minute and add tomato paste. Add a dollop of olive oil to sauce. Season to taste with Italian seasoning, red pepper, fresh basil, salt & pepper. Add about ½ to a tablespoon of brown sugar. That’s the key right there. Mix it all up and let it cook. When the turkey is almost done, pour all the pasta sauce right on it in the pan if it’s big enough or add the turkey to the sauce. Make sure to keep the turkey juice, that makes the sauce. Stir periodically and let it cook for a few minutes. Serve it up.
